The move was agreed following a meeting between teaching unions, the Minister for Education and officials from the Departments of Education and Health.
The review will address reporting mechanisms and response times in the case of outbreaks in schools.
The Irish National Teachers' Organisation called for a public awareness campaign to take place ahead of schools reopening in the New Year.
It was also agreed that a meeting would take place during the holidays.
