No More Soggy Bottoms - Shout out from Declan
Declan gave the new podcast a shout out on the Morning Show
Simple Sponge Cake – filled with strawberry jam, fresh strawberries and whipped cream.

Sponge
- 75g Self Rising Flour
- 3 Medium Eggs
- 75g Caster Sugar
- Pinch of Salt
Filling
- Strawberry Jam
- Punnet of Fresh Strawberries
- Whipped Cream
Method
- Preheat oven to 200°C/400°F/Gas 6.
- Grease and line two 18cm/7½" sandwich tins
- Mix the eggs and sugar with an electric mixer until mixture is pale and thick
- Sive the flour and salt into the mixture and very gently mix it in – use metal spoon
- Transfer to tins and bake for 20 minutes (Approx)
- Cool on a wire tray
- Spread both inside surfaces with jam – cover with cream and half the sliced strawberries – sandwich together
- Spread the top with cream and add the rest of the strawberries
