    Declan gave the new podcast a shout out on the Morning Show

  • Simple Sponge Cake – filled with strawberry jam, fresh strawberries and whipped cream. 





    • 75g Self Rising Flour
    • 3 Medium Eggs
    • 75g Caster Sugar
    • Pinch of Salt


    • Strawberry Jam
    • Punnet of Fresh Strawberries
    • Whipped Cream


    • Preheat oven to 200°C/400°F/Gas 6.
    • Grease and line two 18cm/7½" sandwich tins
    • Mix the eggs and sugar with an electric mixer until mixture is pale and thick
    • Sive the flour and salt into the mixture and very gently mix it in – use metal spoon
    • Transfer to tins and bake for 20 minutes (Approx)
    • Cool on a wire tray
    • Spread both inside surfaces  with jam – cover with cream and  half the sliced strawberries – sandwich together
    • Spread the top with cream and add the rest of the strawberries
